Surprise cooking utensils or cookware as gifts are by far my favorite kinds of surprises. Recently, I received a brand new cast iron skillet in the mail from my boyfriend and I cannot wait to share with everyone how revolutionary this pan has been for me. I can finally cook juicy medium rare steaks with a cast iron charred crust without owning a grill! Although, a grill is still very much needed in my life so I can start experimenting with kabob creations... But I digress! Today I'll be sharing my first cast-iron skillet meal that would make the perfect date night dinner for two! My spinach artichoke salmon recipe includes creamy farfalle pasta, flaky seasoned salmon, and is packed full of veggies like spinach, mushrooms, and artichoke hearts.
Ingredients:
- 1 box farfalle pasta
- 1 pound salmon cut into 4 filets
- Flour
- 1 Tbs olive oil
- 1 Tbs butter
- 3/4 cup chicken broth
- 1 block Philly softened cream cheese
- 4 cloves minced garlic
- 2 cups sliced mushrooms
- 1 14 oz can chopped artichoke hearts (drained)
- 3 cups spinach
- 1/2 cup grated parmesan cheese
- Salt and pepper
Instructions:
- Boil a pot of water and cook 1 box of farfalle according to instructions on box. Once pasta is cooked you can strain and set aside until it's time to add pasta to the skillet.
- Meanwhile, sprinkle both sides of all salmon filets with salt and pepper.
- Dredge all sides of all filets in a bowl of flour till evenly covered.
- Melt oil and butter in cast iron skillet on medium-high heat. Once skillet is hot, cook salmon for about 3 minutes each side. Take salmon out and set aside for later.
- Reduce heat on skillet and then add chicken broth, cream cheese, and garlic. Continue stirring ingredients until everything has melted into a creamy sauce.
- Add spinach, artichokes, and mushrooms and let spinach wilt.
- Add farfalle to skillet and stir to heat everything back up.
- Stir in parmesan cheese and add salmon back to skillet. Let cook until salmon is cooked and flakey. Season with salt and pepper to your liking.
This recipe is rich, decadent, and only took me about 30 minutes to complete. Although I personally drink red wine, a glass of your favorite crisp and fruity white would pair excellently with the salmon.
