Not Your Typical Scrambled Eggs

My very first food blogger post is about how to make scrambled eggs- easily America’s most generic breakfast food that every child learns to make once they learn how to talk. Although you should expect more advanced recipes to come in the near future, this recipe is just as impressive as any other recipe you’ll find online. In fact, this is not so much of a recipe as it is a technique that I believe everyone should know. My specific technique of cooking eggs will transform your mornings and make you feel like a fancy French chef. It involves a lot of whisking and a little bit of patience. But the turn out is a gorgeous, creamy, custardy, scrambled egg that even tastes cheesy although no cheese is required. Fancy Scrambled Eggs
  • 1 Tbs of butter and/or olive oil to cover surface of the pan
  • 4 eggs
  • Salt & pepper
  • Splash of heavy cream, whole milk, or Tbs of greek yogurt
  1. Let butter and/or olive oil melt on medium high heat. Meanwhile, whisk together eggs, salt, and pepper.
  2. Once butter is melted, pour in eggs and continue whisking until the mixture thickens and starts to form clumps. 
  3. After about a minute, take the pan off of the burner and continue to whisk away from heat.
  4. Pour in a splash of heavy cream or the thickener of your choice (whole milk, greek yogurt, or whatever you have on hand that is similar.) Then transfer the pan back to the burner and continue to whisk.
  5. Once eggs are very thick, switch to a spatula and begin to push and fold eggs in pan.
  6. Once eggs are done to your personal preference and are formed into one serving- serve hot and enjoy!
